Manzanilla Cacere\u00f1a is the most outstanding variety of the Gata-Hurdes DOP and is found mainly and almost exclusively in the North of C\u00e1ceres.<\/p>\n
This single-variety oil is made from 100% Manzanilla Cacere\u00f1a olives, resulting in one of the best EVOOs, due to its high oleic acid content\u00a0 (78-80%) compared to the rest of EVOOs (55%-80% of oleic acid).<\/p>\n
On the other hand, it has a very balanced flavour between spicy, sweet and bitter. And given the characteristics of this variety of olives, which have a low fat yield to produce oil, its elaboration process is more expensive than other varieties' one.<\/p>\n

La Chinata Single-variety Manzanilla Cacere\u00f1a is the juice of olives of Manzanilla Cacere\u00f1a variety, harvested in the Sierra de Gata region, in the northwest of the province of C\u00e1ceres. In this area, we harvest only those olives that have the properties we think are essential to obtain a very high quality Extra Virgin Olive Oil. Olives are early harvested, which allows us to produce a higher quality EVOO and thus guarantee the preservation of its organoleptic properties.<\/p>\n
