Vineyard and elaboration
These old vineyards located in Valtuille are over 80 years old and are located on sandy-clay soils with pebbles, among which we find materials such as quartzite and slate.
Mencía is a grape variety mostly found in El Bierzo, its vines grow and develop in difficult conditions with little water and at high altitudes, but these harsh circumstances only enhance the grape's potential.
Its elaboration takes place with destemmed grapes previously harvested manually, which are placed in stainless steel tanks where the alcoholic fermentation takes place. Maceration lasts 10 days.
Aged for 8 months in French oak barrels of between 2 and 3 years of age. Before bottling, wine is slightly filtered to remove the larger particles.

After being the first woman to work with the technical team of the legendary Domaine de la Romanée-Conti in Bourgogne, Verónica Ortega returned to Spain to develop her own project in El Bierzo region.
Verónica, originally from Cádiz, moved to the Leonese area mainly because of the Mencía grape, together with the climate and the wine-growing culture rooted in this area. During her new stage, she produced wines known as VO, Roc or Cobrana, and from the 2015 vintage she began to work with Godello, creating Cal.
