Vineyard and elaboration
The vines are planted on high purity calcium carbonate soil, which is unusual in Bierzo, as this type of soil is not common.
This vibrant white wine comes from a plot of small-grained Godello grapes located in the town of San Juan de la Mata, whose vines are 30 years old.
It is made from destemmed grapes which, after being exposed to a light overnight maceration and a gentle racking of the juice, ferment spontaneously with native yeasts in French oak barrels and 800-litre clay amphorae, where the wine ages for 13 months and is assembled before bottling.
Verónica Ortega Winery
After being the first woman to work with the technical team of the legendary Domaine de la Romanée-Conti in Bourgogne, Verónica Ortega returned to Spain to develop her own project in El Bierzo region.
Verónica, originally from Cádiz, moved to the Leonese area mainly because of the Mencía grape, together with the climate and the wine-growing culture rooted in this area. During her new stage, she produced wines known as VO, Roc or Cobrana, and from the 2015 vintage she began to work with Godello, creating Cal.
The winery has been following since 2017 the traceability of the new D.O: Bierzo classification aiming that Cobrana and Roc are classified as 'vino de pueblo' and Cal and VO, as 'viña clasificada'.
