Valdesil is the first Spanish white winethat ages on its lees in tanks, the first vintage of which was available on the market in 1991. It reflects the purest form of the schist soils of Córgomo and Portela slopes, at 300 metres above the river Sil in the town of Vilamartín de Valdeorras, in the province of Ourense.

This wine has a yellow with bright greenish reflections. On the nose it has citrus and mineral notes, with aromas of delicate stone fruit, mixed with herbal hints of fennel and of ageing on its fine lees. On the palate it is balanced, medium-high bodied, unctuous and with an excellent balance of natural acidity and minerality.

Recommended serving temperature is 9 to 12 ºC.

Vineyard and elaboration

The vineyards are between 20 and 47 years old, located between 400 and 650 metres above sea level. The vines are pruned in simple guyot.

The soils are colluvial, shallow, derived from the meteorization of schist rock.

Each vineyard is vinified individually. Alcoholic fermentation is done with wild yeasts in steel tanks, and the wine ages for 6 months on its fine lees in these tanks. Finally, the two varieties are blended together.

Valdesil Winery

Valdesil has its vineyards in the villages of Portela and Córgomo, in Vilamartín de Valdeorras, Ourense. Its production is exclusively from family-owned vineyards that were planted at the end of the 20th century with high density. This winery claims to have the oldest Godello vineyards in Spain. The slate soils give their wines a very particular and characteristic touch of minerality.
