Vineyard and elaboration
Made from vineyards located on the 135-hectare Can Martí estate in the Penedés region, which has belonged to the Torelló family since 1395, harvesting is carried out manually at the optimum grape ripening stage, achieving a perfect balance between sugar and acidity. Grapes are then quickly taken to the presses in order to avoid oxidation and spontaneous fermentation.
The resulting grape juice ferments in stainless steel tanks under controlled conditions and with native yeasts. The second fermentation takes place in bottles where the cava ages for many months.
During the last period of ageing, the wine sits on traditional racks where bottles are manually stirred.
Torelló Winery
This family winery was founded in 1951 when Francesc Torelló i Casanovas decided to change the direction of his family's traditionally agricultural business in order to start with the wine industry.
Torelló only produces long-aged sparkling wines, enabling it to be enriched with unique flavours and qualities.
In 2013 they began the process of turning the Can Martí vineyards and olive trees into organic viticulture. All production processes are carried out using natural products.
In addition, all winemaking processes are carried out with delicacy and commitment, which guarantees a unique and quality result in each of the products.
