Vineyards and elaboration
The vineyards are located in Arribes del Duero Natural Park, in San Felices de los Gallegos (salamanca). They are 680 meters above sea level and planted on granite-clay soil.
Wine harvesting is handmade.
This wine is elaborated by macerating grape kins for a week. Alcoholic fermentation is done in stainless steel tanks. After pressing, it stays in the tank for clarification and stabilization by refrigeration. It does not make maleolactic fermentation. It does not have sulfurous.
Inma Badillo is the first viticulturist from Alcalá de Henares. She learnt in San Felices de los Gallegos (Salamanca), where she became viticulturist and where her grandfathers’ lands are, where she has come back so as to elaborate wines with a great character. Now she is in charge of the vineyards her neighbours offer to her to make this special wines.
