Vineyard and elaboration
The vineyards are located in Viñaspre (Rioja Alavesa). The vines are between 4 and 7 years old that were sold manually. After that, whole-bunch fermentation takes place in open vats, and the wine ages in barrels and concrete tanks.
The soils are limestone loams and red sandstones which, under an extreme climate, achieve a low yet highly concentrated production. The agriculture is respectful, free from chemical products and 100% organic. Once the grapes have reached their optimum ripeness, they are harvested manually.
In the winery, whole bunches of the eight varieties are selected and put in open vats so that spontaneous fermentation takes place with native yeasts. The wine is then pressed and transfered into 2-year-old barrels and concrete tanks, where it ages for around 8 months.
Winery
Roberto Oliván is the young viticulturist that motivated this project. Following a long family tradition, he started to recover vineyards from unknown areas of the Rioja designation. It is a new generation Riojan winery that elaborates wine like their ancestors did, but with a more sofisticated touch.
