Vineyard and elaboration
This wine is made from selected 40-year-old Treixadura vines together with Alvilla, Albariño and Loureira varieties, all of which are planted on the Miñoteira estate.
The area covers 2.5 hectares, has 4000 vines and is around 40 years old.
The soils are of evolved granite (sábrego) settled on very hard bedrock with a significant content of stones and gravels that improve the sunlight exposure of the bunches.
The grapes are harvested manually and the bunches are selected on the vine itself. To protect the whole grapes, they are transported to the winery in 5 minutes with tractors with a maximum load of 1,500 kilograms.
Vinification is done by gently crushing the grapes on the winery entry. They are pressed in a semi-closed pneumatic press. Pressure never exceeds 0.2 bars. Alcoholic and malolactic fermentation take place in stainless steel tanks.
Manuel Formigo winery was born as the next generation of the Formigo de la Fuente family, who for generations kept a close relationship with viticulture and winemaking in the Ribeiro.
After being part of an industrial winery for the last two decades, they decided to take a leap into quality.
