Vinification is done with 90% destemmed and a 10% stemmed, with alcoholic and maleolactic fermentation in used wooden foudres and concrete lampshade.
It ages for 10 months on its lees in foudre and concrete casks.
Harvesting is manual in 15-kg baskets.
The brothers Juan and Carlos Rodríguez together with Fredi Torres created in 2013 this project where they restart the winemaking tradition of the Rodríguez family in the Ribeira Sacra, in Sober. A faithful respect for the vineyards and the terroir of the area and a traditional winemaking process are the hallmark of this winery. Althought at the beginning they did not want to join the Ribeira Sacra Designation of Origin, their wines reflect all the richness and respect for this terroir.
