The San Cobate vineyards are located in the Ribera del Duero, in the golden triangle formed by Gumiel del Mercado, La Horra and La Aguilera. This wine-growing region is considered one of the most important in Spain. Vineyards are located at 830 to 910 metres above sea level.

Before the creation of the D.O. Ribera del Duero, this region was already known as an exceptional winemaking land.

This wine has a delicate colour. On the nose, it is broad and complex. It has fresh hints of redcurrant, liquorice and spices, rosemary and thyme, as well as balsamic sensations. On the palate, it has ripness and freshness contrasts with structured tannins and sensations that bring us those nuances of the diverse soils of the estate, limestone, clay... with a delicate and enveloping aftertaste.

It is recommended to pair it with game meats and cheese.

Recommended serving temperature is between 16 and 18 ºC.

Vineyard and elaboration

Grapes arrive at the winery and, as soon as they are received, they are selected again, destemmed and subtly crushed. Alcoholic fermentation is spontaneous with native yeasts. No oenological products are added. The most important aspect of this project is to respect natural processes of the biochemical reactions that occur at each stage. Vinifications are carried out in concrete tanks.

The wine ages in two phases. The first is in barrels of different volumes, mostly French oak. After that, San Cobate wine is assembled in larger capacity vats. The woods used are of various uses, so that toasting is not perfumed and does not mask the flavours, aromas and fruit obtained in this wine.

The soil is calcareous clay and the planting rows are oriented to north and south, resulting in very good ripening, achieving high levels of tannins and polyphenols, and therefore wines with a good aptitude for long ageing.

In 2016, Antonio Vázquez Muñoz-Calero started an exciting project in San Cobate with the aim of making wines that respect the personality of their smallholdings and their different soils to the maximum, giving a discreet role to the wood of their carefully selected barrels so that the terroir and the fruit are the main characters of these wines.

Convinced of land, nature and climate of the region respect, Antonio Vázquez, with the unconditional support of his family, decided to promote the values that distinguish the future of the winery: effort, dedication, honesty, patience and rigour. With these objectives in mind, they have recovered the vineyards, classified the estate into four very distinct smallholdings, created terraces in the Portuguese "Douro" style, and they only make wine following a traditional and unhurried way.
