Cook the pasta in a pot with plenty of boiling water for 12 to 13 minutes, depending on how cooked you like it.
While we cook the pasta, take the amount of pesto to taste and mix with a splash of EVOO La Chinata. We also chop the dried tomatoes.
Next, once the pasta is cooked and drained, we serve it on a plate and add the pesto mixture with EVOO and the chopped sun-dried tomatoes to the olive leaves.
Finally, before serving, add the grated Parmesan.
