Recipe: Gratin of Potatoes and Candied Artichokes

The artichokes from Tudela are widely used in haute cuisine thanks to their texture and flavour, and allow for a multitude of culinary combinations to create delicious dishes, such as this potato and candied artichoke gratin. Sauces and creams, as a garnish for meat and fish, as well as with pasta and rice dishes, among many other combinations. Look what an easy and rich recipe we have made!


INGREDIENTS OF THE POTATO AND ARTICHOKE GRATIN

  • 500 g of potatoes
  • 1 jar of candied artichokes La Chinata
  • 100 ml of milk
  • 200 ml of cooking cream
  • · 1 egg
  • · Salt and Pepper

PROCEDURE

1. Peel and cut the potatoes into 1 cm thick slices.

2. Mix the milk, cream and egg in a bowl. Season the mixture.

3. Arrange layers of potatoes and artichokes in an oven-safe container and alternate them with the liquid mixture.

4. Bake at 190ºC for 30 or 40' until golden.
