Recipe: Vegan Chocolate and Olive Seed Cookies

We present this delicious recipe for vegan chocolate cookies and La Chinata Olive Seeds.

La Chinata Olive Seeds are the result of our constant interest in innovating and enhancing the qualities of this fruit, and on this occasion, we have managed to carefully extract the seeds from the very stone of the olive fruit.
The best thing about this seed is that it concentrates all the nutritional and healthy benefits of the olive itself. For this reason, it is very rich in Polyphenols, such as Oleuropein, which gives it high antioxidant power, and it has a great contribution of fiber and protein, as well as a high concentration of unsaturated fatty acids, essential for our body.

  1. In a bowl, mix the flour, baking powder, bicarbonate of soda and salt. Add the chocolate chips and olive seeds, leaving a tablespoon to put on top.
  2.  In another bowl, mix the sugars together with the EVOO, the water and the vanilla. Add this mixture to the bowl with the flour and mix with a wooden spoon until you get a dough. Do not over mix.
  3. Let stand in the fridge preferably one night, but at least one hour.
  4. Preheat the oven to 180ºC and prepare a plate with baking paper.
  5. Put small balls of biscuit with a spoon, leaving space between them and finish with the La Chinata olive seeds on top and the La Chinata salt flakes.
  6. Bake for 12 minutes. Let cool and serve.
