The family of the cheese factory Castrum Erat makes this cheese in an artisan way in their farm in the town of Castuera, in the region of La Serena, in Badajoz.

Nacencia cheese is made following traditional methods with raw milk from sheep of their flock, with enzymatic coagulation, using vegetable coagulant, the pistils of the flower of the wild thistle, typical of the area. It is an unpressed paste, without additives or preservatives.

DESCRIPTION

Its flavour is very smooth but with character, reminding of dried almonds. It also has small bitter and fatty touches in a very pleasant aftertaste.

This cheese has a square shape with a slightly rough thin rind, bathed in Virgin Olive Oil. Inside it has a slightly creamy paste, small holes and an ivory colour.
