Time of ageing: Alcoholic fermentation was spontaneous with native yeasts, in concrete deposits with subsequent maleolactic fermentation in barrels. Wine was refined for 12 months in small fourth-wine 500-litre French oak foudres, from Allier, Vosgues and Nevers woods, and more than one year in bottles.
Vineyard and elaboration
Palacio Quemado is located in Extremadura, in the middle of a 4,000 hectare estate with over 100 vineyards of different varieties, very well adapted to the soil and the area's conditions. This region's climate, softened because of its proximity to the Atlantic Ocean, in addition to its diverse soils, makes it possible for the vines to grow in ideal conditions to achieve a unique quality.
On the estate, each vineyard plot is individually farmed, depending on the orientation and type of soils.
There is minimal intervention in the winery and the grapes are carefully harvested, entering both in the winery and in the tank almost uncrushed, avoiding breakage, to preserve the personality of each plot (of each variety) as well as the vintage's character.
Winery
It was founded in 1999 by the union of Alvear wineries and the Losada Serra family. It is located in the town of Alange, in the region of Tierra de Barros, in Badajoz, Extremadura.
