Vineyard and elaboration
Most of the vineyard in Nieva and its surroundings is rooted in sandy soils. It is an organic vineyard, between pine forests located in the Segovian countryside, the hawthorns take root in sandy soils and slate. These are poor soils that force the vines to give the best of themselves in extreme climatic conditions. Most of the grapes are very old, with vines that are almost two centuries old and have seen several generations of winegrowers.
At an average altitude of 900 metres above sea level, even exceeding 1,000 metres in some plots, conditions are extreme. Even for vines that have seen decades of growth.
The vineyard is managed using traditional local techniques. Grapes arrive at the winery in small boxes. The first grape juice is made and transferred to wood. Fermentation takes place spontaneously with native yeasts in 228 and 600-litre barrels and wooden casks of different sizes. The subsequent ageing is slow and calm, as was done in the traditional way. After 9 months on its lees, Ossian is clarified and bottled.

In 2013, these vineyards characteristics, together with the uniqueness of the wines produced, caught the attention of the Ruiz Aragoneses family, owners of Pago de Carraovejas winery, who purchased the majority stake in this winery and incorporated it into their family group of companies.
Only time, the meticulous knowledge of each vine, the immersion in its soils, the study of the peculiar climate and environment, the meticulous work in the vineyard and in the winery... give us clues to glimpse the scope of a project that reflects the authenticity of a unique landscape. A knowledge they did not have in 2013 when the Ruiz Aragoneses family started their adventure in Ossian.
Even with all they have done, they feel that they have only taken the first steps on a learning path whose aim is to give even more value to the richness of an exceptional heritage. A heritage in the form of vines that, like sculptures, stand firm and hieratic in a soil predestined to last.
