The Acorn-fed Ibérico Morcon Sausage is a particular cold cut, whose alboration is similar to Chorizo's.
The meat we have selected to prepare this piece has excellent quality and we have mostly get it from pig's picnic shoulder.
It is prepared with the large intestine instead of the small one and it requires speccial chopping, by hand and slowly.
Iberian pork lean, bittersweet paprika from La Vera, salt, garlic.
