This is a white wine from Frontonio winery in Aragon. It comes from a harmonious and fresh continental climate that showcases the potential of the local grape varieties.

Saint Frontonio, a beheaded martyr whose head was found upstream, symbolises the winery's spirit of going against the flow.

It has a lemon-green colour. On the nose it reminds of lemon and grapefruit with minerals. It also has austere smoky aromas. On the palate it is concentrated and in keeping with the fresh and elegant acidity. It has a distinctive structure with medium body. A clean, dry style of an extraordinary Macabeo from old vines and dry-farmed vineyards. A complex wine with a long aftertaste.

The serving temperature is between 7 and 10 ºC.

Vineyard and elaboration

The grapes come from traditional bush vines, goblet-trained and dry-farmed, sustainably grown in calcareous soils. The vineyard is more than 65 years old and covers an area of 10 hectares, with a 6% slope in the 'El Sotillo' area, at 530 metres above sea level. These are small, artisan vintages aged in old caves. The grapes are harvested manually.

Vinification is based on destemming, with 20 hours of maceration without SO2. The yeasts are native and vatting takes 15 days in underground concrete at 17-18 ºC.

Winery

In 2008 Fernando Mora started making wine at home. Thus began one of the most interesting and original wine projects in Spain.

The winery is a house with a 200 year old underground cave (3 levels) that enables them to work by gravity and delicately handle the grapes, as well as benefiting from perfect temperature and humidity conditions for ageing.

After a major remodelling, it now lets them process around 70,000 kilos of grapes and age almost 50,000 litres of wine in various containers: concrete, oak foudres and barrels of different sizes up to 600 litres (demi-muid).

Although wines have been aged in this winery since 2017, 2019 is the first vintage that has been made entirely in the new winery and in which they have been able to vinify all the plots separately. There are 45 wines in total with which they will make different blends.
