Mazanilla Pasa en Rama Pastora is a long-aged organic Manzanilla wine from Sanlúcar de Barrameda, Cádiz. It is rooted in the soleras of Solear, where La Pastora takes up a very specific place in the winery, with a clear orientation towards the river, right on the slope that divides the upper and lower neighbourhoods of Sanlúcar. This is an absolutely ideal winery for ageing.

Pastora, in terms of age, is an old manzanilla. It is around nine years old. However, the ageing conditions of the bodega where it is kept offer an organic wine.

This wine is characterised by its bright golden colour, with marked aromas of yeast, saline hints, nutty flavours and chamomile. On the palate it is complex and elegant, with saline hints and a very long aftertaste.

Serving temperature is between 8 and 10 ºC.

Vineyard and elaboration

There are 500 hectares of private vineyards, where the white varieties Palomino, Sauvignon blanc and Chardonnay and the red varieties Tempranillo, Cabernet, Merlot, Syrah and Tintilla de Rota are grown. All of them are grown on Albariza soils, with both manual and mechanical harvesting.

The southern climate balances the area with the Atlantic one, which favours mild summers and winters, with high humidity due to the closeness to the sea, and significant yearly rainfalls, together with high sunshine.

Winery

Barbadillo surname dates back to 1821. It is a centenary winery yet with future. This winery has 17 ageing cellars in Sanlúcar de Barrameda and a plant of white and red grapes wine production. That is why Bodegas Barbadillo is one of the biggest wineries of the Sherry Triangle.
