Vineyard and elaboration
The vineyards, with a surface area of 23 hectares and between 13 and 100 years old, are located at between 400 and 750 metres above sea level and are planted in goblet and double cordon systems. The soils are sandy and clayey with schist.
Wine harvesting is manual in 10-kilogram baskets and hand-picked bunch by bunch in the vineyard.
Regarding vinification, grapes were cold-soaked for two days, then pressed and destemmed. Vinification is done individually depending on the variety and plot. Fermentation is spontaneous in 5-hectolitre barrels, 12,000 and 24,000-litre foudres and 7,000-litre ovoid concrete tanks. Clarified with egg whites, it does not undergo malolactic fermentation and is bottled unfiltered.
Dominion de Bibei winery is located in Manzaneda, Ourense. Its first wine is from 2002, although the project started in 2000. It has underground facilities, completeley integrated with the surroundings. Moreover, the hill's natural gradient is used to build different volumes and, through gravity, get natural calm grape, grapejuice and wine transferring.
