Vineyard and elaboration
Vienyards have a surface of 23 hectares and are between 13 and 100 years old. They are at 300 to 700 meters abouve sea level. Their soils are made of slate, clay and granite.
Wine harvesting is manually done in 10-kg baskets. A manual selection is done vine by vine on the vineyard and re-done in the winery.
Maceration takes 2 days, before fermentation in open 500-l French oak barrels and tappered wooden tanks takes place. Stirring and opening is manual. Maleolactic fermentation is made in 300-l barrels.
Lalama ages for 13 months in used French barrels, for 7 months in tappered French oak tanks and for 16 more months in bottles.
Lalama is not filtered, so solid remains may be found.
Winery
Dominion de Bibei winery is located in Manzaneda, Ourense. Its first wine is from 2002, although the project started in 2000. It has underground facilities, completeley integrated with the surroundings. Moreover, the hill's natural gradient is used to build different volumes and, through gravity, get natural calm grape, grapejuice and wine transferring.
