Vineyard and elaboration
This wine is made with grapes from four vineyards that are between 50 and 100 years old, goblet planted on sandy loam soils with schist and slate.
The grapes are manually harvested and the production is very low, only 400 to 800 grams per vine.
The grapes are selected in the winery bunch by bucnh and destemmed. Prefermentative maceration lasts 2 days and alcoholic fermentation takes place in open 500-litres French oak barrels, with manual stirring. Malolactic fermentation is spontaneous in 300-litre barrels.
Winery
Dominion de Bibei winery is located in Manzaneda, Ourense. Its first wine is from 2002, although the project started in 2000. It has underground facilities, completeley integrated with the surroundings. Moreover, the hill's natural gradient is used to build different volumes and, through gravity, get natural calm grape, grapejuice and wine transferring.
