Vineyard and elaboration
It has 100 hectares of organically and naturally farmed vineyards that stand neatly and tidily on the heights of Yerga mountain in the Sistema Ibérico, a mountain setting overlooking the Ebro valley. The geography, the microclimates and the calcareous and ferrous clay soils, together with the history, culture and prominence of the Garnacha grape, combine to explain Alfaro's deep wine-growing identity.
Vinification is based on destemming and crushing the grapes. Fermentation is spontaneous in stainless steel vats with pumping over, using native yeasts. It macerates for approximately 35 days and malolactic fermentation takes place in stainless steel vats.
Winery
The winery was founded in 1948 and is a true reflection of the area's 2000-year-old winemaking culture. The wild and high environment of Monte Yerga, where the first Cistercian monks arrived, is the family origin of this winery, where they have recovered the traditional viticulture of Garnacha variety.
