Vineyard and elaboration
The vineyard is located in Zarautz. Vineyards are planted on vines shape, on south-east facing slopes, on clay soils with a rocky substratum of slate and basalt, and protected by a superficial sandstone.
Vinification is based on cold maceration for 24-48 hours. Whole grapes are gently pressed. The grape juice is decanted and fermented in stainless steel tanks for 10-12 days at 16 degrees.
Afterwards, the wine is kept for 6 months in stainless steel tanks on its fine lees. Then the wine is poured for subsequent fermentation in the bottle. After that, it ages for 30 months in the bottle 'en rima' on its lees. The first disgorgement is in September 2019, without expedition liqueur.
Winery
The Izar-leku Mahastiak project was born in 2015 and joined the Zapiain & López de Lacalle (Artadi) families. From the winegrower Inaxio Manterola's experience in Zarautz, they grow 3.75 hectares of Hondarribi Zuri and Honzarribi Beltza varieties, with which they make this sparkling wine starting with a txacoli wine.
