Olive Oil Ice Cream with Cherry Flavored Balsamic Cream

The Cherry Flavored Balsamic Cream is a gourmet product made by hand with a sweet flavor, a very dark tone and a very dense texture, making it the ideal dressing for meat and fish, for salads or grilled vegetables, for carpaccios , sauces, cured cheeses and even to dress ice cream, like this one from EVOO, aim!

Yield 4 portions






  1. Mix the milk, cream, salt and half the sugar in a small saucepan and bring to a low heat until the sugar dissolves.
  2. In another container, mix the egg yolks and the rest of the sugar vigorously until they are integrated.
  3. Gradually add the warm milk mixture while continuing to mix into the bowl with the yolks.
  4. Put the preparation on low heat and continue mixing until it thickens enough to cover a spoon.
  5. Remove from heat and pass the mixture through a sieve.
  6. Add the Extra Virgin Olive Oil and pour the mixture into the ice cream maker and mix for 20 minutes. Then transfer the mixture to a freezer-safe container and chill for at least an hour before serving.
  7. Accompany with some threads of La Chinata Cherry Flavored Balsamic Cream.
