This cured goat cheese with the Extremadura seal has great cultural and traditional value. It is made in a traditional way with the milk of goats that graze freely and feed on the botanical richness of the area, which gives it great nutritional value.
Its secret is the traditional production process based on raw goat milk, rennet, salt and lactic ferments.
The result is a product with a certain spiciness that gradually increases in flavour and aroma over time.
On the palate it is melting, buttery and slightly chewy. It has a whitish colour, medium intensity, low bitterness, medium saltiness and low acidity.
This cheese pairs very well with our Cepas El Raposo and our nuts such as Toasted Almonds with Extra Virgin Olive Oil, Rosemary and Smoked Paprika.
