Vineyards and elaboration
The vineyards are organic and located in the village of Sestrica. The soils are made of slate and sand and are at an altitude of 1030 metres above sea level. The vines are over 80 years old. The grapes are harvested manually and have native yeasts. Fermentation takes place in vats and concrete tanks for 40 days, with a daily manual stirring.
The winery is a house with a 200-year old underground cave with 3 levels, that allows to work by gravity and handle the grapes delicately, aand offers the perfect ageing temperature and humidity conditions. After a major renovation, about 70,000 kilos of grapes can be processed and almost 50,000 litres of wine can age in various containers: concrete, oak foudres and barrels of different sizes up to 600 litres (demi-muid).
Although wines have been aged in this winery since 2017, 2019 is the first vintage that has been made entirely in the new winery and in which they have been able to vinify all the smallholdings separately. There are 45 wines in total with which the different blends are made.
