Vineyard and elaboration
The vineyard is organic and produces 100% Palomino grapes. It comes from the Pago Balbaína Alta, Jerez. Vines have been planted for 40 to 50 years in albariza soil and have been grown organically for more than 15 years.
Once the grape reaches the desired ripeness, it is manually harvested. There is a primary bunch selection on the vine and, once in the winery, after sitting for 24 hours in a refrigerated truck, grapes are selected again at the selection table, so that only the one with the perfect quality go to the winemaking process. After removing the stem, the whole grapes are placed in a stainless steel tank, where temperature is firmly controlled. 2 or 3 days after, alcoholic fermentation will start spontaneously.
While fermentation process is taking place, stirring does so, and the grapes' skins located in the upper part ('sombrero', hat) make contact with the fermenting grape juice to boost the exchange of compounds from the solid part to the liquid one. Once this stage is finished, devatting is done and the resulting wine is transferred to sherry casks, previously soaked in old 'oloroso' wine. Here is where malolactic fermentation will take place.
This wine ages for 22 months in casks soaked in oloroso, and it is later bottled with no clarification treatment.
Winery
Forlong, artisan and organic winery, started out in 2007 when 'El olivar de Forlón' estate was purchased, getting back the old vineyard, olive grove and fruit tree plantation lost through the years. The final 'g' that was part of the surname of the former owner, the Brittish Peter Forlong, was also recovered, bringing Forlong back to life, a dream had 'for a long time' that finally came true.
