The red wine Triángulo from the Luis Pérez winery is a 100% Tintilla monovarietal, a native variety  this winery has tried to bring back since its beginnings.

On the nose, it is very spicy, emphasizing black pepper with blackberry and cherry hits. On the palate, it is smooth as well as fresh.

It is very gastronomic for its elegance and softness, so it can be paired with fatty food such as game meats, with country herb sauces that complement the spicy character of tintilla grapes. It also pairs with pork meat such as ‘pluma’ (feather cut) or ‘presa’ (shoulder cut) as they pair well with the acidic structure of the tintilla, which cleanses the mouth and refreshes it after the hravy fats taken.

The recommended serving temperature is 16ºC.

Vineyard and elaboration

Vineyards are located in Calderín del Obispo estate in Balbaína, on a Barajuela and Tosca Cerrada types of Albariza soil.

Night harvest is handmade, using baskets of no more than 14 kg.

Grapes undergo a selective process at the selection table and they later ferment in both steel tanks and open castks for roughly 30 days.  It is a very static process, with little pump-overs so a to fully preserve this variety’s elegance and softness. Finally, wine ages 5 months in 5-year-old oak barrels followed by 15 more months in a deposit before being bottled.

The winery

Bodegas Luis Pérez starts in 2002 under the following premise: ‘Jerez must go back to the vineyard’. Since then, he has gone great lenghts to develop personal projects to interpret his homeland.

Its story begins in a buildig dated from 1844. It was restored and they made wine there for some years, until thay buit the ney winery for size reasons.

They do a noctural handmade harvesting and work with a selection table and gravity-led runoff. Depending on the plot and the type of grape, they do diverse elaborations, always experimenting and trying to learn every year.

Nowadays they work with stailess steel deposits, vats, barrels, concrete and winebags, although winemaking depends more on the origing of the grape rather than on the material when it is done.
