Vineyard and elaboration
Treixadura is a variety that adapts well to cool, well-drained soils with a granitic nature. The climate in this area is Atlantic, with marked contrasts between seasons. Rainfall concentrates in the winter and spring seasons, and summers and autumns are drier. The rock on which the estate is built is granitic in origin, with sand and minerals such as mica, quartz and feldspar in some areas, while in others, however, clay and slate prevail. Harvesting is carried out manually and selectively in small baskets, followed by a meticulous manual selection of bunches and bums. They use carefully selected barrels and once bottled, wines spend an average of 18 months in the winery.
Dominio do Bibei Winery
Dominio do Bibei is located in the province of Ourense and was founded in 2000 by a group of people whose origins are in that terroir. These lands are in a special place, far from big cities or polluting industries.
In this winery they are not lovers of high alcohol wines, a lot of new wood and a lot of extraction. They are mainly looking for elegance and complexity, achieved through the lengthy wine ageing process. Their wines are characterised by being fresh and mineral.
