Vineyard and elaboration
Grapes allocated to Imperial come from their own vineyards located in Villalba, Briones and Torremontalbo, at between 450 and 650 meters above sea level and of more than 40 years of age. They have clayey-calcareous soils, that lack organic matter and have a low production rate. They are oriented towards the South and are goblet pruned. Grapes are handpicked in 20-kg baskets, that are kept for 24 hours in cold rooms so as to prevent oxidation, balance their colour and preserve fruit aroma. After that, a second grape selection is made and they ferment by gravity on differente-sized oak barrels of 80, 120 and 160 Hl, depending on the estate's size. They have their own yeasts for alcoholic fermentation, selected in vineyards allocated to Imperial. Maceration takes place for 20 days aproximately, during which different types of pumping are alternated, according to fermentation evolution and wine tasting. Maleolactic fermentation takes place on concrete and wood tanks before starting the ageing process in new and single-wine French and American oak barrels.
Winery
Imperial winery is a small and singular autonomous and traditional winery located in the original facilities of CVNE, in Haro, where the history of this company started. Here, one of the best Spanish wines has been produced since 1920 and it is only produced when there are excepcional vintages: the Imperial.
