Vineyard and elaboration
Most of the grape varieties come from the vineyard known as Les Alcusses, planted on classic trellises and in old vessels at 600 metres above sea level. It consists of 10 hectares of old vines where the oldest varieties are around 70 years old in the case of Pedro Ximénez and 40 years old in the case of Macabeo. With a Mediterranean climate characterised by hot summers and cold winters, these vineyards grow in sandy loam and clay loam soils, depending on the variety planted.
The grapes are harvested manually in 15 kg baskets, going through the selection table after destemming. Maceration in a pneumatic press, natural cold settling and fermentation in old clay vats on its lees. It ages for 6 months in amphorae.
Celler del Roure Winery
Founded in 1996 as a small family winery and located in Moixent, it is placed in the territory known as "the Valencian Tuscany".
The owner and winemaker, Pablo Calatayud, was looking for a way to incorporate old winemaking methods with the idea of returning to the historical essence of Valencian wines.
Through a line of research conducted in 2009 on wine ageing in clay jars, they recovered this ancient tradition. This was positive when it came to making the wines, as this type of ageing does not add flavours or aromas and fully preserves the essence and soul of the wines.
