Cholo Blanco is a limited production D.O. Ribeiro, whose vineyard is located in the sub-region of Avia Valley, in Beade, Ourense. It is a very personal wine named Manuel Formigo. It has a very mineral profile and it is full of concentration.
It has a straw yellow colour. On the nose it has ripe stone fruit aroma, very balsamic, also camomile, lime blossom, pennyroyal, with herbaceous touches and hardly any citrus. On the palate it is oily, very intense, powerful and delicate.
It pairs very well with salads, white fish, poultry and game meat.
Recommended serving temperature is between 7º and 10ºC.

Vineyard and elaboration
The vineyard is located in the Miñoteira and Portela estates. Soils are of evolved granite (sábrego) settled on very hard bedrock with a significant content of stones and gravels that improve the sunlight exposure of the bunches.
Vinification process is based on a gentle crushing and pressing in a semi-closed pneumatic press. Grape juice never exceeds 0.2 bar of pressure. There is no lees and transferring is done following moon phases.
Manuel Formigo winery was born as the next generation of the Formigo de la Fuente family, who for generations kept a close relationship with viticulture and winemaking in the Ribeiro.
After being part of an industrial winery for the last two decades, they took the quality leap.
In 2006 they returned to their origins, starting to produce wines exclusively with grapes from their own vineyards, which comprise 6 hectares of land where almost all the native varieties of Ribeiro region grow.
In the case of white varieties, they work with Treixadura, Godello, Loureira, Caiño Blanco, Torrontés, Albariño, Alvilla do Avia and Palomino.
In the case of the red varieties, they work with Caiño longo, Sousón, Brancellao and Alicante Bouschet.
