Vineyard and elaboration
Smallholdings located on the slopes of the Sierra del Molar are goblet planted vines on sandy loam soils covered with gravel.
The grapes are harvested manually and the vinification is based on vatting with 30% of whole grapes in small open underground wineries. Alcoholic fermentation takes place in maceration with grape skins for two weeks at a temperature of 30°C. The wine is then devatted into foudres, where the malolactic fermentation takes place on its lees.
Winery
The first grapes of this winery were vatted 25 years ago. Casa Castillo is a family winery that produces quality wines with personality, flavour and character, boasting about respecting the tradition of the area and expressing the characteristics of the land and the microclimate, as well as the particularities of the local grape varieties.
