Ausás Interpretación 2018 is the result of this vintage generosity, with a extremely pure and fruity aroma on the nose; and lavish, massive and expressive on the mouth. The aftertaste is long, fresh (with balsamic hints) and smart. A certain ‘calciferous’ character has to be highlighted, as it brings minerality. It has a cherry red colour.

It pairs very well with grilled meat, cold cuts, ham, seasoned dishes and oxtail.

Recommendede serving temperature is 16ºC.

Vineyards and elaboration

Wine harvesting is manual. Vinification is made by smallholdings so as to respect the effect of every soil. Maceration is cold in order to ease fruit extraction and fermentation is made at different temperatures to try to respect each origin singularity.

Xavier Ausàs created this new project based on three cornerstones: aromatic purity, freshness and elegant tannic manifestation; working side by side with trusted winegrowers who, in addition, are all his friends.

For Xavier Ausàs it is very important who is behind each smallholding and so the winegrower-terroir duo is be part of Ausàs-Interpretación. Consequently, each smallholding will not only stablish a style, but they will also complement each other. In this range of possibilities this wine gets the floral character of light soils, the fruity character of clay soils, the freshness of high vineyards and the powerful character of calcareous soils.
