Vineyard and elaboration
In the province of Toledo we find the town of Almorox where these Albillo Real vineyards are located. The vineyards were planted in 1942 on a sandy soil of granitic origin at 600 metres above sea level. The climate is continental-Mediterranean.
These vines are cultivated in a traditional way and following ecological practices: no chemicals are used and all the work is done manually.
After the grapes are harvested manually and cooled to 4ºC, the grape juice is obtained by crushing whole bunches of grapes in small tanks, which are then cold macerated for a couple of days. They are then pressed and ferment in 300 and 500-litre French oak barrels, at controlled temperatures. After 10 months of ageing, the wine is bottled.
Arrayán Winery
This winery was founded in 1999 as a personal project of José María Entrecanales and María Marsans in Santa Cruz del Retamar, Toledo. After an exhaustive research of the soil, climate and topography, they began planting varieties such as Syrah, Merlot, Cabernet Sauvignon and Petit Verdot.
Thanks to Maite Sánchez, the winemaker, a new stage in the production of existing wines and the incorporation of native varieties to their range of wines began.
