Pre-fermentative maceration is a cold process and fermentation takes place in wooden barrels of 3,000 to 4,500 litres and in stainless steel tanks. The yeast is native and the grapes are stirred. 90% of the grapes are whole grapes and 10% of the grapes are destemmed. Malolactic fermentation is natural.
