Vineyard and elaboration
This wine is made with Garnacha grapes from different smallholdings: Dehesa, Vista Alegre, Manzanillo and Marañones. The soil is highly weathered granite with a sandy texture. They are frsh, deep and rich in organic materials. Harvesting is done manually and the vineyard is organic, and is 30 and 70 years old. Pre-fermentative maceration is a cold process and fermentation takes place in wooden barrels of 3,000 to 4,500 litres and in stainless steel tanks. The yeast is native and the grapes are stirred. 90% of the grapes are whole grapes and 10% of the grapes are destemmed. Malolactic fermentation is natural.
