Vineyard and elaboration
In the Sierra de Montilla there are seven selected smallholdings where organic viticulture, free from pesticides and herbicides, is used. The vines are 40 to 60 years old and the soil is calcareous and chalky.
The yield is between 4,000 and 7,000 kilos per hectare.
Grape harvesting is manual and it is made ten to fifteen days before the traditional harvest date, in order to obtain fresher wines.
As for the vinification process, each smallholding has used either grapes pressed directly and fermented in vats, or alternatively, previously crushed grapes and fermented in open vats.
In both cases, the grapes have subsequently rested in the same 300-oz. vats under 'velo de flor' for 8 months.
Winery
This winery has extensive vineyards in the Sierra de Montilla and Moriles, in Cordoba. The most important grape variety is Pedro Ximénez, the star variety in their sweet, fine, fragrant and 'amontillado' wines.
It can age up to 5 million litres of wine in oak casks distributed in different cellars where the oldest soleras in the area, that are 200 years old, are located.
Today, the winery has 50 owners and its wines are distributed throughout Spain and 40% of them abroad, mainly in the Netherlands, Japan, Canada and Australia.
